Description

Prepare a simple Greek-inspired sheet pan dinner with chicken, feta, and vegetables.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 red onion, chopped
  • 1 zucchini, chopped
  • 1 yellow squash, chopped
  • 1 pint cherry tomatoes
  • 4 oz feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup Kalamata olives, pitted and halved

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine chicken, bell peppers, red onion, zucchini, yellow squash, and cherry tomatoes.
  3. Add olive oil, minced garlic, oregano, salt, and pepper to the bowl. Toss to coat evenly.
  4. Spread the mixture in a single layer on a large sheet pan.
  5. Bake for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
  6. Remove from oven and sprinkle with crumbled feta cheese and Kalamata olives.
  7. Serve immediately.

Notes

  • For extra flavor, marinate the chicken for at least 30 minutes before cooking.
  • You can substitute other vegetables based on your preference.
