Description

Ingredients

  • 2 pounds Yukon gold potatoes, peeled and quartered
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chicken broth

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss potatoes with olive oil, lemon juice, garlic, oregano, salt, and pepper.
  3. Arrange potatoes in a single layer in a baking dish.
  4. Pour chicken broth over potatoes.
  5. Bake for 45-60 minutes, or until potatoes are tender and golden brown, flipping halfway through.
