Ingredients

- 2 pounds Yukon gold potatoes, peeled and quartered
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chicken broth
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss potatoes with olive oil, lemon juice, garlic, oregano, salt, and pepper.
- Arrange potatoes in a single layer in a baking dish.
- Pour chicken broth over potatoes.
- Bake for 45-60 minutes, or until potatoes are tender and golden brown, flipping halfway through.
- Serve hot.
Notes
- For extra crispy potatoes, broil for the last few minutes of cooking.
- Adjust lemon juice and herbs to your preference.
