Description

Hearty soup with gnocchi and shepherd’s pie flavors.


Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 cups beef broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 lb gnocchi
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 2 cups mashed potatoes
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Brown ground beef in a large pot over medium-high heat. Drain excess grease.
  2. Add onion, carrots, and celery to the pot and cook until softened, about 5 minutes.
  3. Stir in garlic, thyme, rosemary, salt, and pepper. Cook for 1 minute.
  4. Pour in beef broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 10 minutes.
  5. Add gnocchi, peas, and corn to the pot. Cook until gnocchi is tender, about 5 minutes.
  6. Top each serving with mashed potatoes and cheddar cheese.

Notes

  • For a richer flavor, use bone broth instead of beef broth.
  • Add a splash of Worcestershire sauce for extra depth.
