- 1 lb ground beef
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 cups beef broth
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 lb gnocchi
- 1 cup frozen peas
- 1 cup frozen corn
- 2 cups mashed potatoes
- 1/2 cup shredded cheddar cheese
Instructions
- Brown ground beef in a large pot over medium-high heat. Drain excess grease.
- Add onion, carrots, and celery to the pot and cook until softened, about 5 minutes.
- Stir in garlic, thyme, rosemary, salt, and pepper. Cook for 1 minute.
- Pour in beef broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Add gnocchi, peas, and corn to the pot. Cook until gnocchi is tender, about 5 minutes.
- Top each serving with mashed potatoes and cheddar cheese.
Notes
- For a richer flavor, use bone broth instead of beef broth.
- Add a splash of Worcestershire sauce for extra depth.
- Adjust seasonings to your preference.
