Description

Soft ginger molasses cookies filled with a sweet cream cheese frosting.


Ingredients

Scale
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 large egg
  • 1/4 cup molasses
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 4 ounces cream cheese, softened
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk together flour, baking soda, cinnamon, ginger, cloves, and salt.
  3. In a separate bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in egg, molasses, milk, and vanilla extract.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Drop by rounded tablespoons onto ungreased baking sheets.
  7. Bake for 8-10 minutes, or until edges are set.
  8. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.
  9. For the frosting, beat together cream cheese and powdered sugar until smooth.
  10. Spread frosting on the flat side of one cookie and top with another cookie to form a sandwich.
