Description

A complete meal featuring garlic herb chicken, mashed potatoes, and glazed carrots.


Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 cloves garlic, minced
  • 1 tbsp dried herbs (such as thyme, rosemary, oregano)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 4 medium potatoes, peeled and cubed
  • 1/4 cup milk
  • 2 tbsp butter
  • Salt and pepper to taste
  • 1 lb carrots, peeled and sliced
  • 2 tbsp butter
  • 2 tbsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix garlic, herbs, olive oil, salt, and pepper.
  3. Rub mixture over chicken breasts.
  4. Bake chicken for 20-25 minutes, or until cooked through.
  5. While chicken bakes, boil potatoes until tender.
  6. Drain potatoes and mash with milk and butter. Season with salt and pepper.
  7. In a skillet, melt butter and add carrots. Cook for 5 minutes.
  8. Add honey, salt, and pepper to carrots. Cook until glazed, about 5 more minutes.
  9. Serve chicken with mashed potatoes and glazed carrots.

  • Adjust herb quantities to your preference.
  • Add a splash of cream to mashed potatoes for extra richness.
  • Use maple syrup instead of honey for glazed carrots.
