Description

A quick and flavorful meal featuring tender meatballs in a garlic butter sauce served over fresh zucchini noodles.


Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1/4 cup milk
  • 1/4 cup butter
  • 2 tablespoons olive oil
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste
  • 3 medium zucchini, spiralized

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, 1 clove of minced garlic, milk, salt, and pepper. Mix well.
  3. Form the mixture into 1-inch meatballs.
  4. Heat olive oil in an oven-safe skillet over medium-high heat. Brown the meatballs on all sides.
  5. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until cooked through.
  6. While the meatballs are baking, melt butter in a separate skillet over medium heat. Add the remaining 1 clove of minced garlic and cook until fragrant, about 1 minute.
  7. Add the spiralized zucchini noodles to the skillet with the garlic butter. Cook for 2-3 minutes, stirring gently, until slightly tender.
  8. Add the cooked meatballs to the skillet with the zucchini noodles. Stir in chopped parsley.
  9. Serve immediately.

  • For extra flavor, you can add a pinch of red pepper flakes to the garlic butter sauce.
