Ingredients

- 1 pound boneless, skinless chicken breasts, cubed
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup butter, melted
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, combine rice, chicken broth, melted butter, garlic, thyme, salt, and pepper.
- Pour mixture into a 9×13 inch baking dish.
- Add chicken pieces to the rice mixture, stirring to combine.
- Cover dish with foil and bake for 30 minutes.
- Remove foil and bake for another 15-20 minutes, or until chicken is cooked through and rice is tender.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, brown the chicken in a skillet before adding it to the casserole.
- You can substitute other herbs, such as rosemary or oregano, for the thyme.
- Add vegetables like broccoli or peas for a more complete meal.
