Quick and easy garlic butter beef bites with potatoes.
Ingredients

- 1 pound beef sirloin, cut into 1-inch cubes
- 1 pound baby potatoes, quartered
- 4 tablespoons butter
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- In a bowl, toss potatoes with 1 tablespoon olive oil, salt, and pepper.
- Heat remaining olive oil in a large skillet over medium-high heat. Add potatoes and cook until golden brown and tender, about 15-20 minutes. Remove from skillet and set aside.
- In the same skillet, melt butter over medium heat. Add garlic and thyme; cook until fragrant, about 1 minute.
- Add beef cubes to the skillet and cook to your desired doneness, about 5-7 minutes for medium-rare.
- Return potatoes to the skillet. Toss with beef and garlic butter sauce.
- Garnish with fresh parsley and serve immediately.
