Quick and easy garlic butter beef bites with potatoes.


Ingredients

  • 1 pound beef sirloin, cut into 1-inch cubes
  • 1 pound baby potatoes, quartered
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a bowl, toss potatoes with 1 tablespoon olive oil, salt, and pepper.
  2. Heat remaining olive oil in a large skillet over medium-high heat. Add potatoes and cook until golden brown and tender, about 15-20 minutes. Remove from skillet and set aside.
  3. In the same skillet, melt butter over medium heat. Add garlic and thyme; cook until fragrant, about 1 minute.
  4. Add beef cubes to the skillet and cook to your desired doneness, about 5-7 minutes for medium-rare.
  5. Return potatoes to the skillet. Toss with beef and garlic butter sauce.
  6. Garnish with fresh parsley and serve immediately.
