Classic comfort food casserole with potatoes and cheese.
Ingredients

- 30 oz frozen hash browns, thawed
- 10.75 oz condensed cream of chicken soup
- 16 oz sour cream
- 1/2 cup melted butter
- 2 cups shredded cheddar cheese, divided
- 2 cups crushed cornflakes
- 1/4 cup melted butter
Instructions
- Preheat oven to 350°F.
- In a large bowl, combine hash browns, cream of chicken soup, sour cream, melted butter, and 1 cup of cheddar cheese.
- Mix well.
- Pour mixture into a greased 9×13 inch baking dish.
- In a separate bowl, combine cornflakes and melted butter.
- Sprinkle cornflake mixture over the potato mixture.
- Sprinkle remaining 1 cup of cheddar cheese over the cornflakes.
- Bake for 30-40 minutes, or until golden brown and bubbly.
- Let stand for a few minutes before serving.
Notes
- You can substitute cream of mushroom soup for cream of chicken soup.
- For a crispier topping, broil for the last few minutes of baking.
