Description

A creamy and cheesy baked spaghetti squash dish.


Ingredients

Scale
  • 1 spaghetti squash, halved and seeded
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1/4 teaspoon nutmeg
  • 1/2 cup grated Gruyere cheese
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Drizzle spaghetti squash halves with olive oil, salt, and pepper.
  3. Place cut-side down on a baking sheet and bake for 40-50 minutes, or until tender.
  4. Let cool slightly, then shred the squash with a fork.
  5. Melt butter in a saucepan over medium heat.
  6. Whisk in flour and cook for 1 minute.
  7. Gradually whisk in milk until smooth.
  8. Bring to a simmer, then reduce heat and cook for 5 minutes, or until thickened.
  9. Stir in nutmeg, Gruyere, and Parmesan cheese until melted.
  10. Combine shredded squash with cheese sauce.
  11. Pour into a baking dish and bake for 20-25 minutes, or until golden brown and bubbly.
  12. Let stand for a few minutes before serving.

Notes

  • You can add breadcrumbs on top for extra crunch.
