Description
A creamy and cheesy baked spaghetti squash dish.
Ingredients

- 1 spaghetti squash, halved and seeded
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon butter
- 1/4 cup all-purpose flour
- 2 cups milk
- 1/4 teaspoon nutmeg
- 1/2 cup grated Gruyere cheese
- 1/2 cup grated Parmesan cheese
Instructions
- Preheat oven to 400°F (200°C).
- Drizzle spaghetti squash halves with olive oil, salt, and pepper.
- Place cut-side down on a baking sheet and bake for 40-50 minutes, or until tender.
- Let cool slightly, then shred the squash with a fork.
- Melt butter in a saucepan over medium heat.
- Whisk in flour and cook for 1 minute.
- Gradually whisk in milk until smooth.
- Bring to a simmer, then reduce heat and cook for 5 minutes, or until thickened.
- Stir in nutmeg, Gruyere, and Parmesan cheese until melted.
- Combine shredded squash with cheese sauce.
- Pour into a baking dish and bake for 20-25 minutes, or until golden brown and bubbly.
- Let stand for a few minutes before serving.
Notes
- You can add breadcrumbs on top for extra crunch.
- Feel free to use different cheeses, such as cheddar or mozzarella.
