- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/4 cup cornstarch
- 2 tablespoons vegetable oil
- 4 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1/2 cup soy sauce
- 1/4 cup honey
- 2 tablespoons rice vinegar
- 1–2 tablespoons sriracha (adjust to your spice preference)
- 1/2 teaspoon red pepper flakes
- Cooked rice, for serving
- Sesame seeds, for garnish
- Chopped green onions, for garnish
Instructions
- In a bowl, toss the chicken pieces with cornstarch until evenly coated.
- Heat vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through, about 6-5 minutes.
- Add the garlic and ginger to the skillet and cook for 30 seconds, until fragrant.
- In a separate bowl, whisk together the soy sauce, honey, rice vinegar, sriracha, and red pepper flakes.
- Pour the sauce over the chicken and bring to a simmer. Cook until the sauce has thickened and is sticky, about 3-4 minutes.
- Serve the Firecracker Chicken over cooked rice. Garnish with sesame seeds and chopped green onions.
Notes
- Adjust the amount of sriracha and red pepper flakes to control the spice level.
- For a thicker sauce, mix 1 teaspoon of cornstarch with 1 tablespoon of water and add it to the sauce while simmering.
- Serve immediately for best results.
