Simple lentil meatballs, ideal for vegetarians.
Ingredients

- 1 cup green lentils, cooked
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped onion
- 1 clove garlic, minced
- 1 egg
- 1 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, combine cooked lentils, breadcrumbs, Parmesan cheese, onion, garlic, egg, olive oil, oregano, salt, and pepper.
- Mix until well combined.
- Form mixture into small meatballs.
- Place meatballs on a baking sheet.
- Bake for 20-25 minutes, or until golden brown.
- Serve with your favorite sauce.
Notes
- You can use any type of cooked lentils.
- Add more breadcrumbs if the mixture is too wet.
- Serve over pasta or in a sandwich.
