Description

Simple lentil meatballs, ideal for vegetarians.


Ingredients

Scale
  • 1 cup green lentils, cooked
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1 egg
  • 1 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, combine cooked lentils, breadcrumbs, Parmesan cheese, onion, garlic, egg, olive oil, oregano, salt, and pepper.
  3. Mix until well combined.
  4. Form mixture into small meatballs.
  5. Place meatballs on a baking sheet.
  6. Bake for 20-25 minutes, or until golden brown.
  7. Serve with your favorite sauce.

Notes

  • You can use any type of cooked lentils.
  • Add more breadcrumbs if the mixture is too wet.
  • Serve over pasta or in a sandwich.
