A simple shepherd’s pie recipe featuring a rich gravy.
Ingredients

- 1 lb ground lamb or beef
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 cup beef broth
- 1/2 cup frozen peas
- 1/4 cup all-purpose flour
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 4 cups mashed potatoes
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Brown ground meat in a large skillet. Drain excess fat.
- Add onion, carrots, and celery to the skillet and cook until softened, about 5 minutes.
- Stir in flour and tomato paste. Cook for 1 minute.
- Gradually add beef broth, stirring constantly to avoid lumps.
- Add thyme, salt, and pepper. Simmer for 10 minutes, or until the gravy has thickened.
- Stir in peas.
- Transfer the meat mixture to a baking dish.
- Top with mashed potatoes and dot with butter.
- Bake for 20-25 minutes, or until golden brown and bubbly.
- Let stand for 5 minutes before serving.
Notes
- For a richer flavor, use homemade beef broth.
- Add a splash of Worcestershire sauce to the gravy for extra depth.
- Top with shredded cheese before baking for a cheesy shepherd’s pie.
