A simple shepherd’s pie recipe featuring a rich gravy.


Ingredients

  • 1 lb ground lamb or beef
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 cup beef broth
  • 1/2 cup frozen peas
  • 1/4 cup all-purpose flour
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 4 cups mashed potatoes
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Brown ground meat in a large skillet. Drain excess fat.
  3. Add onion, carrots, and celery to the skillet and cook until softened, about 5 minutes.
  4. Stir in flour and tomato paste. Cook for 1 minute.
  5. Gradually add beef broth, stirring constantly to avoid lumps.
  6. Add thyme, salt, and pepper. Simmer for 10 minutes, or until the gravy has thickened.
  7. Stir in peas.
  8. Transfer the meat mixture to a baking dish.
  9. Top with mashed potatoes and dot with butter.
  10. Bake for 20-25 minutes, or until golden brown and bubbly.
  11. Let stand for 5 minutes before serving.

Notes

  • For a richer flavor, use homemade beef broth.
  • Add a splash of Worcestershire sauce to the gravy for extra depth.
