🍰🍇 Raspberry Cheesecake

- 1 ½ cups crushed cookies (Graham crackers or Digestive)
- ¼ cup sugar
- ½ cup melted butter
- 2 packages (8 oz each) of cream cheese, at room temperature
- ½ cup sugar
- 1 teaspoon vanilla extract
- 2 eggs
- ½ cup sour cream
- 1 cup fresh raspberries
- ¼ cup raspberry jam, warmed
- Preheat the oven to 175°C (350°F).
- Prepare the crust: Mix the crushed cookies with sugar and melted butter. Press the mixture into the bottom of a tart pan. Bake for 10 minutes, then let it cool.
- Prepare the filling: Beat the cream cheese with sugar and vanilla until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the sour cream.
- Pour the mixture over the crust and bake for 30-35 minutes or until the center is slightly firm.
- Let it cool completely, then refrigerate for at least 4 hours (preferably overnight).
- Decorate with fresh raspberries and spread the warmed raspberry jam on top before serving.
