Description

Prepare peppermint brownies with chocolate ganache in one bowl.


Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/2 cup semi-sweet chocolate chips
  • 1/4 cup crushed peppermint candies

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. In a large bowl, mix melted butter, sugar, cocoa powder, and salt.
  3. Stir in vanilla extract, then add eggs one at a time, mixing well after each addition.
  4. Add flour and mix until just combined.
  5. Fold in chocolate chips and crushed peppermint candies.
  6. Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  7. Let brownies cool completely before frosting with chocolate ganache.
  8. For the chocolate ganache, heat 1/2 cup heavy cream until simmering. Pour over 6 ounces of chopped semi-sweet chocolate. Let sit for 1 minute, then stir until smooth.
  9. Pour ganache over cooled brownies and spread evenly.
  10. Refrigerate for 15 minutes to set ganache before cutting into squares and serving.

Notes

  • For a fudgier brownie, underbake slightly.
