Description
Prepare peppermint brownies with chocolate ganache in one bowl.
Ingredients

- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/2 cup semi-sweet chocolate chips
- 1/4 cup crushed peppermint candies
Instructions
- Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
- In a large bowl, mix melted butter, sugar, cocoa powder, and salt.
- Stir in vanilla extract, then add eggs one at a time, mixing well after each addition.
- Add flour and mix until just combined.
- Fold in chocolate chips and crushed peppermint candies.
- Pour batter into prepared pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
- Let brownies cool completely before frosting with chocolate ganache.
- For the chocolate ganache, heat 1/2 cup heavy cream until simmering. Pour over 6 ounces of chopped semi-sweet chocolate. Let sit for 1 minute, then stir until smooth.
- Pour ganache over cooled brownies and spread evenly.
- Refrigerate for 15 minutes to set ganache before cutting into squares and serving.
Notes
- For a fudgier brownie, underbake slightly.
- Store brownies in an airtight container at room temperature for up to 3 days.
