Simple Mexican rice made without tomato sauce.
Ingredients

- 1 tablespoon olive oil
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Heat olive oil in a saucepan over medium heat.
- Add rice and cook, stirring constantly, until lightly browned.
- Add chicken broth, onion, garlic, cumin, salt, and pepper.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until liquid is absorbed and rice is tender.
- Fluff with a fork before serving.
Notes
- For extra flavor, toast the rice in the oil until golden brown before adding the broth.
- Adjust the amount of salt and pepper to your taste.
