Description

Simple Mexican rice made without tomato sauce.


Ingredients

  • 1 tablespoon olive oil
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Heat olive oil in a saucepan over medium heat.
  2. Add rice and cook, stirring constantly, until lightly browned.
  3. Add chicken broth, onion, garlic, cumin, salt, and pepper.
  4. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until liquid is absorbed and rice is tender.
  5. Fluff with a fork before serving.
