Simple recipe for flavorful Mexican rice.
Ingredients

- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup tomato sauce
- 1/4 cup chopped onion
- 1 clove garlic, minced
- 1 tablespoon vegetable oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- Rinse rice until water runs clear.
- Heat oil in a saucepan over medium heat. Add rice and cook, stirring, until lightly browned.
- Add onion and garlic and cook until softened.
- Stir in tomato sauce, chicken broth, chili powder, cumin, salt, and pepper.
- Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until liquid is absorbed and rice is tender.
- Fluff with a fork before serving.
Notes
- For spicier rice, add a pinch of cayenne pepper.
- Garnish with chopped cilantro for added flavor.
