Description

Simple recipe for flavorful Mexican rice.


Ingredients

Scale
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup tomato sauce
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1 tablespoon vegetable oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Rinse rice until water runs clear.
  2. Heat oil in a saucepan over medium heat. Add rice and cook, stirring, until lightly browned.
  3. Add onion and garlic and cook until softened.
  4. Stir in tomato sauce, chicken broth, chili powder, cumin, salt, and pepper.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes, or until liquid is absorbed and rice is tender.
  6. Fluff with a fork before serving.

Notes

  • For spicier rice, add a pinch of cayenne pepper.
  • Garnish with chopped cilantro for added flavor.
