Ingredients

  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup tomato sauce
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon vegetable oil

Instructions

  1. Rinse the rice in a fine-mesh sieve until the water runs clear.
  2. Add vegetable oil, onion, and garlic to the rice cooker. Sauté for 2 minutes.
  3. Add the rinsed rice, chicken broth, tomato sauce, chili powder, cumin, salt, and pepper to the rice cooker. Stir to combine.
  4. Close the lid and cook according to your rice cooker’s instructions for white rice.
  5. Once the rice is cooked, let it sit for 10 minutes before fluffing with a fork.
