Description

Make your own low carb tortillas with zucchini. This recipe is simple and requires few ingredients.

Ingredients

Scale
  • 1 large zucchini, grated
  • 1 large egg
  • 2 tablespoons almond flour
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Olive oil or coconut oil for cooking

Instructions

  1. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel or cheesecloth.
  2. In a bowl, combine the grated zucchini, egg, almond flour, garlic powder, salt, and pepper. Mix well.
  3. Heat a lightly oiled griddle or frying pan over medium heat.
  4. Pour 1/4 cup of the zucchini mixture onto the hot griddle, spreading it into a thin, round shape.
  5. Cook for 3-4 minutes on each side, or until golden brown and cooked through.
  6. Repeat with the remaining zucchini mixture.
  7. Serve your zucchini tortillas immediately or store them in the refrigerator for later use.

Notes

  • For best results, remove as much moisture as possible from the grated zucchini.
  • You can add other seasonings to the batter, such as onion powder, Italian herbs, or chili powder.
  • These tortillas are delicate, so handle them with care.
