Simple and satisfying low carb chicken casserole.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 4 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup cheddar cheese, shredded
  • 1/4 cup chicken broth
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine shredded chicken, broccoli, and cauliflower.
  3. In a separate bowl, mix together cream cheese, sour cream, cheddar cheese, chicken broth, garlic powder, salt, and pepper.
  4. Pour cheese mixture over chicken and vegetables; stir until well combined.
  5. Transfer mixture to a greased 9×13 inch baking dish.
  6. Bake for 25-30 minutes, or until golden brown and bubbly.
  7. Let stand for 5 minutes before serving.
