Simple and satisfying low carb chicken casserole.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 4 ounces cream cheese, softened
- 1/2 cup sour cream
- 1 cup cheddar cheese, shredded
- 1/4 cup chicken broth
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine shredded chicken, broccoli, and cauliflower.
- In a separate bowl, mix together cream cheese, sour cream, cheddar cheese, chicken broth, garlic powder, salt, and pepper.
- Pour cheese mixture over chicken and vegetables; stir until well combined.
- Transfer mixture to a greased 9×13 inch baking dish.
- Bake for 25-30 minutes, or until golden brown and bubbly.
- Let stand for 5 minutes before serving.
Notes
- For extra flavor, add a sprinkle of paprika before baking.
- You can substitute other low-carb vegetables, such as spinach or zucchini.
