Ingredients

  • 1 pound boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 12 corn tortillas
  • Optional toppings: chopped cilantro, diced onion, lime wedges, salsa

Instructions

  1. Cut chicken thighs into small pieces.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Add chicken and cook until browned and cooked through, about 5-7 minutes.
  4. Stir in chili powder, cumin, garlic powder, and onion powder. Season with salt and pepper.
  5. Warm corn tortillas.
  6. Fill each tortilla with chicken and your favorite toppings.
  7. Serve immediately.
