Description
This casserole combines chicken, bell peppers, and onions in a cheesy, flavorful dish.
Ingredients

- 1 pound chicken breasts, cooked and shredded
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 packet fajita seasoning
- 1 can (10.75 ounces) condensed cream of chicken soup
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 12 flour tortillas, cut into pieces
Instructions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet, sauté bell pepper and onion until tender.
- Stir in shredded chicken and fajita seasoning.
- In a bowl, combine cream of chicken soup, cheddar cheese, and sour cream.
- In a 9×13 inch baking dish, layer tortilla pieces, chicken mixture, and cheese mixture. Repeat layers.
- Bake for 20-25 minutes, or until heated through and cheese is melted and bubbly.
- Let stand for a few minutes before serving.
Notes
- Add a can of diced tomatoes for extra flavor.
- Use different types of cheese, such as Monterey Jack or pepper jack.
- Serve with your favorite toppings, such as salsa, guacamole, or extra sour cream.
