Description

This casserole combines chicken, bell peppers, and onions in a cheesy, flavorful dish.


Ingredients

  • 1 pound chicken breasts, cooked and shredded
  • 1 bell pepper, sliced
  • 1 onion, sliced
  • 1 packet fajita seasoning
  • 1 can (10.75 ounces) condensed cream of chicken soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 12 flour tortillas, cut into pieces

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet, sauté bell pepper and onion until tender.
  3. Stir in shredded chicken and fajita seasoning.
  4. In a bowl, combine cream of chicken soup, cheddar cheese, and sour cream.
  5. In a 9×13 inch baking dish, layer tortilla pieces, chicken mixture, and cheese mixture. Repeat layers.
  6. Bake for 20-25 minutes, or until heated through and cheese is melted and bubbly.
  7. Let stand for a few minutes before serving.

  • Add a can of diced tomatoes for extra flavor.
  • Use different types of cheese, such as Monterey Jack or pepper jack.
