A comforting and hearty chicken pot pie without the crust.
Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 carrots, peeled and sliced
- 2 celery stalks, chopped
- 1 pound boneless, skinless chicken breasts, cubed
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cups chicken broth
- 1 cup frozen peas
- 1 cup frozen corn
- 1/2 cup heavy cream
- 2 tablespoons all-purpose flour
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery and cook until softened, about 5 minutes.
- Add chicken, thyme, salt, and pepper. Cook until chicken is browned.
- Pour in chicken broth and bring to a boil. Reduce heat and simmer for 10 minutes.
- In a small bowl, whisk together heavy cream and flour until smooth. Pour into the pot and stir until thickened.
- Stir in peas and corn. Cook until heated through, about 5 minutes.
- Serve hot.
Notes
- For a thicker pot pie, use more flour.
- Add other vegetables, such as potatoes or green beans.
