Description

Easy sweet and sour chicken made in a slow cooker.


Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 onion, cut into 1-inch pieces
  • 1 (20 ounce) can pineapple chunks, undrained
  • 1 cup ketchup
  • 1/2 cup brown sugar
  • 1/4 cup soy sauce
  • 2 tablespoons white vinegar
  • 1 tablespoon cornstarch

Instructions

  1. Place chicken, bell peppers, onion, and pineapple in a slow cooker.
  2. In a separate bowl, whisk together ketchup, brown sugar, soy sauce, and vinegar. Pour over the chicken and vegetables.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.
  4. In the last 30 minutes of cooking, stir in cornstarch to thicken the sauce.
  5. Serve over rice.
