Description
Easy sweet and sour chicken made in a slow cooker.
Ingredients

- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 red bell pepper, cut into 1-inch pieces
- 1 onion, cut into 1-inch pieces
- 1 (20 ounce) can pineapple chunks, undrained
- 1 cup ketchup
- 1/2 cup brown sugar
- 1/4 cup soy sauce
- 2 tablespoons white vinegar
- 1 tablespoon cornstarch
Instructions
- Place chicken, bell peppers, onion, and pineapple in a slow cooker.
- In a separate bowl, whisk together ketchup, brown sugar, soy sauce, and vinegar. Pour over the chicken and vegetables.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through.
- In the last 30 minutes of cooking, stir in cornstarch to thicken the sauce.
- Serve over rice.

- Garnish with sesame seeds or green onions.
