Description

Creamy tomato chicken made in a slow cooker.


Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes, oil-packed, drained
  • 1 tsp Italian seasoning
  • 1/2 tsp red pepper flakes
  • 1 (15 oz) can diced tomatoes, undrained
  • 8 oz cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil

Instructions

  1. Season chicken with garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil in a skillet over medium-high heat. Sear chicken for 2-3 minutes per side.
  3. Transfer chicken to a slow cooker.
  4. In the same skillet, sauté garlic and sun-dried tomatoes for 1 minute. Stir in Italian seasoning and red pepper flakes.
  5. Pour diced tomatoes over the chicken.
  6. Cook on low for 6-8 hours or high for 3-4 hours.
  7. Stir in cream cheese and Parmesan cheese until melted and smooth.
  8. Garnish with fresh basil before serving.

Notes

  • Serve over pasta, rice, or mashed potatoes.
  • Adjust red pepper flakes to your spice preference.
  • For a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir into the sauce during the last 30 minutes of cooking.
