Description
Creamy tomato chicken made in a slow cooker.
Ingredients

- 2 lbs boneless, skinless chicken breasts
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1/4 cup sun-dried tomatoes, oil-packed, drained
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes
- 1 (15 oz) can diced tomatoes, undrained
- 8 oz cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil
Instructions
- Season chicken with garlic powder, onion powder, salt, and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear chicken for 2-3 minutes per side.
- Transfer chicken to a slow cooker.
- In the same skillet, sauté garlic and sun-dried tomatoes for 1 minute. Stir in Italian seasoning and red pepper flakes.
- Pour diced tomatoes over the chicken.
- Cook on low for 6-8 hours or high for 3-4 hours.
- Stir in cream cheese and Parmesan cheese until melted and smooth.
- Garnish with fresh basil before serving.
Notes
- Serve over pasta, rice, or mashed potatoes.
- Adjust red pepper flakes to your spice preference.
- For a thicker sauce, mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir into the sauce during the last 30 minutes of cooking.
