Ingredients

- 2 pounds beef chuck, cut into 1-inch cubes
- 1.5 pounds Yukon gold potatoes, cut into 1-inch cubes
- 4 tablespoons butter, divided
- 6 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup beef broth
- 2 tablespoons fresh parsley, chopped
Instructions
- Place beef cubes and potatoes in your crockpot.
- In a skillet, melt 2 tablespoons of butter over medium heat. Add garlic, thyme, and rosemary; cook for 1 minute until fragrant.
- Pour garlic butter mixture over the beef and potatoes in the crockpot. Season with salt and pepper.
- Add beef broth to the crockpot. Stir to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until beef is tender.
- Stir in remaining 2 tablespoons of butter until melted.
- Garnish with fresh parsley before serving.
Notes
- For extra flavor, sear the beef cubes in a skillet before adding them to the crockpot.
- You can substitute other types of potatoes, such as red potatoes or russet potatoes.
- Adjust the amount of garlic and herbs to your preference.
