- 2 pounds boneless, skinless chicken breasts
- 1 cup chopped carrots
- 1 cup chopped celery
- 1/2 cup chopped onion
- 4 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/2 cup all-purpose flour
- 1/2 cup milk
- 1 (8 ounce) can refrigerated biscuits, cut into pieces
Instructions
- Place chicken breasts in a slow cooker. Add carrots, celery, and onion.
- Pour in chicken broth, salt, pepper, and thyme.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Remove chicken from the slow cooker and shred it. Return shredded chicken to the slow cooker.
- In a small bowl, whisk together flour and milk until smooth. Stir this mixture into the slow cooker.
- Bring the mixture to a simmer and cook for 5 minutes, or until thickened.
- Add the biscuit pieces to the slow cooker and cook for another 10-15 minutes, or until dumplings are cooked through.
Notes
- For a richer flavor, you can use chicken thighs instead of breasts.
- You can add other vegetables like peas or corn.
- Ensure the dumplings are fully cooked before serving.
