A simple and comforting crockpot recipe for chicken and dumplings.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1/2 cup chopped onion
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 cup all-purpose flour
  • 1/2 cup milk
  • 1 (8 ounce) can refrigerated biscuits, cut into pieces

Instructions

  1. Place chicken breasts in a slow cooker. Add carrots, celery, and onion.
  2. Pour in chicken broth, salt, pepper, and thyme.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Remove chicken from the slow cooker and shred it. Return shredded chicken to the slow cooker.
  5. In a small bowl, whisk together flour and milk until smooth. Stir this mixture into the slow cooker.
  6. Bring the mixture to a simmer and cook for 5 minutes, or until thickened.
  7. Add the biscuit pieces to the slow cooker and cook for another 10-15 minutes, or until dumplings are cooked through.

Notes

  • For a richer flavor, you can use chicken thighs instead of breasts.
