- 2 medium zucchini, cut into fries
- 1/4 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup panko bread crumbs
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Olive oil spray
Instructions
- Preheat oven to 400°F (200°C).
- Prepare zucchini fries.
- In three separate shallow dishes, place flour, beaten eggs, and a mixture of panko, Parmesan, garlic, oregano, salt, and pepper.
- Dip each zucchini fry in flour, then egg, then panko mixture, ensuring it’s fully coated.
- Place coated zucchini fries on a baking sheet lined with parchment paper.
- Spray fries with olive oil.
- Bake for 15-20 minutes, flipping halfway through, until golden brown and crispy.
- Serve immediately.
Notes
- For extra crispiness, broil for the last 1-2 minutes, watching carefully to avoid burning.
- Serve with your favorite dipping sauce, such as marinara or ranch.
