Description
This is a creamy, spicy, and flavorful vegan pasta dish with Cajun seasoning.

- 1 pound pasta
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 (14-ounce) can diced tomatoes, undrained
- 1 (13.5-ounce) can coconut milk
- 2 tablespoons Cajun seasoning
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
- Add red and green bell peppers and cook until tender-crisp, about 5 minutes.
- Stir in diced tomatoes, coconut milk, Cajun seasoning, and smoked paprika. Bring to a simmer and cook for 10 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Add cooked pasta to the skillet and toss to coat.
- Garnish with fresh parsley and serve immediately.
Notes
- Adjust the amount of Cajun seasoning to your preference.
- For a spicier dish, add a pinch of cayenne pepper.
- You can add other vegetables, such as mushrooms or zucchini.
