  • 2 boneless, skinless chicken breasts
  • 8 oz fettuccine or pasta of choice
  • 1 cup cherry tomatoes, halved
  • 3 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 cup heavy cream or a lighter alternative like coconut milk
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh basil for garnish (optional)

Instructions

  1. Season the chicken breasts with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a skillet and cook the chicken for 6-7 minutes on each side until golden brown.
  3. Cook the pasta in salted boiling water according to package instructions until al dente.
  4. In the same skillet, sauté minced garlic, then add cherry tomatoes and spinach until softened.
  5. Pour in heavy cream, stir, and add Parmesan cheese until melted.
  6. Add the cooked pasta to the sauce, tossing to coat. Adjust consistency with reserved pasta water if needed.
  7. Slice the chicken and place it on top of the pasta. Garnish with fresh basil.
