Description
Salmon fillets in a creamy lemon-caper sauce.
Ingredients

- 4 salmon fillets
- 1/2 cup all-purpose flour
- 1/4 cup olive oil
- 4 tablespoons butter
- 2 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup lemon juice
- 1/4 cup heavy cream
- 2 tablespoons capers, drained
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Dredge salmon fillets in flour, shaking off excess. Season with salt and pepper.
- Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat.
- Sear salmon for 3-4 minutes per side, until golden brown and cooked through. Remove salmon from skillet and set aside.
- Melt remaining 2 tablespoons butter in the same skillet. Add garlic and cook for 1 minute, until fragrant.
- Pour in chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet.
- Bring sauce to a simmer and stir in heavy cream and capers. Season with salt and pepper to taste.
- Return salmon to the skillet and spoon sauce over the fillets.
- Garnish with fresh parsley and serve immediately.
Notes
- Serve over pasta or with a side of vegetables.
- Add a pinch of red pepper flakes for a touch of heat.
