Description

Hearty and flavorful German goulash with a creamy twist.


Ingredients

  • 2 lbs beef chuck, cubed
  • 2 tbsp olive oil
  • 2 large onions, chopped
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tbsp sweet paprika
  • 1 tsp smoked paprika
  • 1/2 tsp caraway seeds
  • 1/4 tsp cayenne pepper
  • 4 cups beef broth
  • 1 cup sour cream
  • 2 tbsp all-purpose flour
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season beef with salt and pepper.
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown beef in batches and set aside.
  3. Add onions to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  4. Stir in tomato paste, sweet paprika, smoked paprika, caraway seeds, and cayenne pepper. Cook for 1 minute.
  5. Return beef to the pot. Pour in beef broth, bring to a boil, then reduce heat and simmer for 2-3 hours, or until beef is tender.
  6. In a small bowl, whisk together sour cream and flour until smooth. Gradually stir into the goulash.
  7. Simmer for 10 minutes, or until the sauce has thickened.
  8. Serve hot, garnished with fresh parsley.

  • Serve with egg noodles or spaetzle.
  • Adjust the amount of cayenne pepper to your preference.
  • For a richer flavor, use homemade beef broth.
