Creamy Chicken and Rice Casserole

This Creamy Chicken and Rice Casserole is the ultimate comfort food, loaded with tender chicken, fluffy rice, melty cheese, and a rich, creamy sauce. Topped with buttery breadcrumbs, it’s a hearty meal perfect for family dinners.

  • 2 cups cooked chicken (shredded or cubed)
  • 1 cup uncooked long-grain rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups chicken broth
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1/2 cup panko breadcrumbs
  • 2 tbsp butter (melted)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your cooked chicken by shredding or cubing it into bite-sized pieces.
  3. In a large bowl, mix together uncooked rice, cream of chicken soup, cream of mushroom soup, chicken broth, milk, garlic powder, onion powder, salt, and pepper.
  4. Fold in the cooked chicken and 1 cup of shredded cheddar cheese until evenly combined.
  5. Pour the mixture into a greased 9×13-inch casserole dish and spread it out evenly.
  6. Sprinkle additional shredded cheese over the top if desired.
  7. In a small bowl, combine the panko breadcrumbs and melted butter, then sprinkle evenly over the casserole.
  8. Cover with foil and bake for 30 minutes. Remove foil and bake for another 15 minutes, or until rice is tender and the top is golden brown.
  9. Let cool slightly before serving.

Notes

  • You can substitute the cream of mushroom soup with another can of cream of chicken if preferred.
  • Add frozen vegetables like peas or broccoli for a complete one-dish meal.
  • Leftovers reheat well and make great next-day lunches.
  • For extra crunch, broil the casserole for 2–3 minutes after baking uncovered.
