Description

Chicken breasts filled with cranberry and spinach.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 10 ounces frozen spinach, thawed and squeezed dry
  • 1/2 cup dried cranberries
  • 1/4 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, combine spinach, cranberries, feta cheese, and garlic.
  3. Cut a pocket in each chicken breast.
  4. Stuff the spinach mixture into the chicken pockets.
  5. Drizzle olive oil over the chicken and season with salt and pepper.
  6. Bake for 25-30 minutes, or until chicken is cooked through.
