- 3 pounds corned beef brisket
- 1 large onion, quartered
- 3 carrots, peeled and chopped
- 3 celery stalks, chopped
- 4 cloves garlic, minced
- 1 teaspoon black peppercorns
- 1 bay leaf
- Water to cover
Instructions
- Place the corned beef in a slow cooker.
- Add onion, carrots, celery, garlic, peppercorns, and bay leaf.
- Pour in enough water to cover the beef.
- Cook on low for 8-10 hours or on high for 4-5 hours, until the beef is tender.
- Remove the beef and let it rest for 10-15 minutes before slicing against the grain.
- Serve with your favorite sides.
Notes
- For added flavor, you can add a bottle of dark beer to the slow cooker.
- Serve with cabbage and potatoes for a traditional meal.
