Ingredients

  • 3 pounds corned beef brisket
  • 1 large onion, quartered
  • 3 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon black peppercorns
  • 1 bay leaf
  • Water to cover

Instructions

  1. Place the corned beef in a slow cooker.
  2. Add onion, carrots, celery, garlic, peppercorns, and bay leaf.
  3. Pour in enough water to cover the beef.
  4. Cook on low for 8-10 hours or on high for 4-5 hours, until the beef is tender.
  5. Remove the beef and let it rest for 10-15 minutes before slicing against the grain.
