Description

Traditional Greek soup with chicken, lemon, and rice.


Ingredients

Scale
  • 1 whole chicken
  • 12 cups water
  • 1 cup long-grain rice
  • 3 lemons, juiced
  • 2 eggs
  • Salt and pepper to taste

Instructions

  1. Place the chicken in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 1 hour.
  2. Remove the chicken from the pot and let it cool. Shred the chicken meat and set aside.
  3. Strain the broth to remove any solids. Return the broth to the pot and bring to a boil.
  4. Add the rice to the boiling broth and cook until tender, about 15 minutes.
  5. In a separate bowl, whisk together the lemon juice and eggs.
  6. Slowly drizzle the lemon-egg mixture into the hot broth, stirring constantly to prevent curdling.
  7. Add the shredded chicken to the soup and season with salt and pepper.
  8. Heat through and serve.
