Description
Traditional Greek soup with chicken, lemon, and rice.
Ingredients

- 1 whole chicken
- 12 cups water
- 1 cup long-grain rice
- 3 lemons, juiced
- 2 eggs
- Salt and pepper to taste
Instructions
- Place the chicken in a large pot and cover with water. Bring to a boil, then reduce heat and simmer for 1 hour.
- Remove the chicken from the pot and let it cool. Shred the chicken meat and set aside.
- Strain the broth to remove any solids. Return the broth to the pot and bring to a boil.
- Add the rice to the boiling broth and cook until tender, about 15 minutes.
- In a separate bowl, whisk together the lemon juice and eggs.
- Slowly drizzle the lemon-egg mixture into the hot broth, stirring constantly to prevent curdling.
- Add the shredded chicken to the soup and season with salt and pepper.
- Heat through and serve.
