Classic Chicken Pot Pie is a comforting family favorite that combines tender chicken, fresh vegetables, and a creamy sauce encased in a flaky pie crust.

  • 2 cups cooked chicken, shredded
  • 1 cup carrots, diced
  • 1 cup peas
  • 1 cup potatoes, diced
  • 1/2 cup onion, chopped
  • 1/3 cup butter
  • 1/3 cup all-purpose flour
  • 1 3/4 cups chicken broth
  • 2/3 cup milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1 package refrigerated pie crusts (2 crusts)

Instructions

  1. Prepare the chicken and vegetables by shredding the chicken and dicing the vegetables.
  2. In a large skillet, melt the butter and sauté the onion until soft. Add flour, salt, pepper, thyme, and garlic powder, stirring until bubbly.
  3. Gradually whisk in chicken broth and milk, cooking until the sauce thickens.
  4. Add the chicken, carrots, peas, and potatoes to the sauce, mixing well.
  5. Roll out one pie crust and place it in a pie dish, then pour in the chicken mixture.
  6. Cover with the second pie crust, seal the edges, and cut slits in the top crust.
  7. Preheat the oven to 425°F (220°C) and bake for 30-35 minutes until golden brown.
  8. Let the pot pie cool for 10 minutes before serving.

Notes

  • Use cold ingredients for a flakier crust.
  • Don’t overfill the pie crust to prevent overflow.
  • Let the pot pie rest before slicing for easier serving.
