- 1 cup carrots, diced
- 1 cup peas
- 1 cup potatoes, diced
- 1/2 cup onion, chopped
- 1/3 cup butter
- 1/3 cup all-purpose flour
- 1 3/4 cups chicken broth
- 2/3 cup milk
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp garlic powder
- 1 package refrigerated pie crusts (2 crusts)
- Prepare the chicken and vegetables by shredding the chicken and dicing the vegetables.
- In a large skillet, melt the butter and sauté the onion until soft. Add flour, salt, pepper, thyme, and garlic powder, stirring until bubbly.
- Gradually whisk in chicken broth and milk, cooking until the sauce thickens.
- Add the chicken, carrots, peas, and potatoes to the sauce, mixing well.
- Roll out one pie crust and place it in a pie dish, then pour in the chicken mixture.
- Cover with the second pie crust, seal the edges, and cut slits in the top crust.
- Preheat the oven to 425°F (220°C) and bake for 30-35 minutes until golden brown.
- Let the pot pie cool for 10 minutes before serving.
