Description

These cookies combine the flavors of cinnamon rolls and sugar cookies.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 1/4 cup packed brown sugar
  • 2 teaspoons ground cinnamon
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  2. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  3. Divide the dough in half. On a lightly floured surface, roll out one half of the dough into a 12×16 inch rectangle.
  4. In a small bowl, combine the melted butter, brown sugar, and cinnamon. Spread this mixture evenly over the rolled-out dough.
  5. Starting from one long edge, tightly roll up the dough into a log. Wrap the log in plastic wrap and chill for at least 2 hours. Repeat with the remaining dough.
  6. Preheat oven to 350°F (175°C). Slice the chilled dough logs into 1/4-inch thick rounds. Place the cookies on ungreased baking sheets.
  7. Bake for 8-10 minutes, or until the edges are lightly golden. Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  8. In a medium bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Drizzle the glaze over the cooled cookies.
