Cinnamon Roll Protein Muffins

Description

High-protein muffins with cinnamon roll flavor.


Ingredients

Scale
  • 1 cup oat flour
  • 1/2 cup vanilla protein powder
  • 1/4 cup granulated sweetener
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsweetened applesauce
  • 1/2 cup milk
  • 2 large eggs
  • 2 tablespoons melted coconut oil
  • 2 teaspoons cinnamon
  • 2 tablespoons butter, melted

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, combine oat flour, protein powder, sweetener, baking powder, and salt.
  3. In a separate bowl, whisk together applesauce, milk, eggs, and melted coconut oil.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. In a small bowl, mix cinnamon and melted butter.
  6. Fill each muffin liner about 2/3 full with batter. Swirl cinnamon mixture into each muffin.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the muffin tin for a few minutes before transferring to a wire rack to cool completely.

Notes

  • Store muffins in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 1 week.
  • You can substitute almond flour for oat flour.
