Description
Grilled chicken marinated in cilantro and lime, topped with fresh avocado salsa.
Ingredients

- 4 boneless, skinless chicken breasts
- 1/4 cup chopped cilantro
- 2 limes, juiced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 avocados, diced
- 1/4 cup red onion, diced
- 1 jalapeño, seeded and minced
Instructions
- In a bowl, combine cilantro, lime juice, olive oil, garlic powder, salt, and pepper.
- Marinate chicken in the mixture for at least 30 minutes.
- Preheat grill to medium-high heat.
- Grill chicken for 6-8 minutes per side, or until cooked through.
- While chicken is grilling, combine avocados, red onion, and jalapeño in a bowl.
- Top grilled chicken with avocado salsa and serve.
Notes
- For extra flavor, add a pinch of cumin to the marinade.
- Serve with rice or a side salad.
