Description

Grilled chicken marinated in cilantro and lime, topped with fresh avocado salsa.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup chopped cilantro
  • 2 limes, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 avocados, diced
  • 1/4 cup red onion, diced
  • 1 jalapeño, seeded and minced

Instructions

  1. In a bowl, combine cilantro, lime juice, olive oil, garlic powder, salt, and pepper.
  2. Marinate chicken in the mixture for at least 30 minutes.
  3. Preheat grill to medium-high heat.
  4. Grill chicken for 6-8 minutes per side, or until cooked through.
  5. While chicken is grilling, combine avocados, red onion, and jalapeño in a bowl.
  6. Top grilled chicken with avocado salsa and serve.

Notes

  • For extra flavor, add a pinch of cumin to the marinade.
