Description

Classic prime rib roast for a holiday meal.


Ingredients

  • 1 (4-5 pound) prime rib roast
  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary

Instructions

  1. Preheat oven to 450°F (232°C).
  2. Rub the prime rib roast with olive oil.
  3. In a small bowl, combine salt, pepper, garlic powder, onion powder, thyme, and rosemary.
  4. Season the roast evenly with the spice mixture.
  5. Place the roast in a roasting pan.
  6. Roast for 15 minutes, then reduce the oven temperature to 325°F (163°C).
  7. Continue roasting for about 13-15 minutes per pound for medium-rare, or until a meat thermometer inserted into the thickest part of the roast registers 130-135°F (54-57°C).
  8. Remove the roast from the oven and let it rest for 15-20 minutes before carving.
