- 1 (4-5 pound) prime rib roast
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
Instructions
- Preheat oven to 450°F (232°C).
- Rub the prime rib roast with olive oil.
- In a small bowl, combine salt, pepper, garlic powder, onion powder, thyme, and rosemary.
- Season the roast evenly with the spice mixture.
- Place the roast in a roasting pan.
- Roast for 15 minutes, then reduce the oven temperature to 325°F (163°C).
- Continue roasting for about 13-15 minutes per pound for medium-rare, or until a meat thermometer inserted into the thickest part of the roast registers 130-135°F (54-57°C).
- Remove the roast from the oven and let it rest for 15-20 minutes before carving.

- Resting the roast allows the juices to redistribute, resulting in a more tender and flavorful roast.
