Description

Festive cookies with cranberries and orange.


Ingredients

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 orange, zested
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup dried cranberries

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract and orange zest.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  6. Stir in dried cranberries.
  7. Drop by rounded tablespoons onto ungreased baking sheets.
  8. Bake for 8-10 minutes, or until edges are golden brown.
  9. Let cool on baking sheets for a few minutes before transferring to a wire rack to cool completely.

Notes

  • For a stronger orange flavor, add 1/2 teaspoon of orange extract.
