- 1/2 cup chimichurri sauce
- 2 cups cooked rice
- 1 cup black beans
- 1 cup corn
- 1 avocado, sliced
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1/4 cup garlic sauce
Instructions
- Marinate chicken thighs in chimichurri sauce for at least 30 minutes.
- Preheat grill to medium-high heat.
- Grill chicken for 6-8 minutes per side, or until cooked through.
- Let chicken rest for 5 minutes, then slice.
- Assemble bowls with rice, black beans, corn, avocado, red onion, and cilantro.
