Description
Chicken thighs served over orzo pasta in a creamy lemon garlic sauce.
Ingredients

- 1.5 lbs boneless, skinless chicken thighs
- 1 tsp salt
- 0.5 tsp black pepper
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup orzo pasta
- 2 cups chicken broth
- 0.5 cup heavy cream
- 0.25 cup grated Parmesan cheese
- 2 tbsp lemon juice
- 2 tbsp chopped fresh parsley
Instructions
- Season chicken thighs with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes per side. Remove chicken from skillet and set aside.
- Add garlic to the skillet and cook for 1 minute until fragrant.
- Add orzo pasta and chicken broth to the skillet. Bring to a boil, then reduce heat and simmer for 10-12 minutes, or until orzo is cooked and liquid is absorbed.
- Stir in heavy cream, Parmesan cheese, and lemon juice. Season with salt and pepper to taste.
- Return chicken to the skillet and heat through.
- Garnish with fresh parsley and serve.
Notes
- For extra flavor, marinate the chicken thighs for at least 30 minutes before cooking.
- You can substitute chicken breasts for chicken thighs, but adjust cooking time accordingly.
- Add vegetables such as spinach or asparagus to the orzo for a more complete meal.
