Chicken thighs served over orzo pasta in a creamy lemon garlic sauce.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 0.5 cup heavy cream
  • 0.25 cup grated Parmesan cheese
  • 2 tbsp lemon juice
  • 2 tbsp chopped fresh parsley

Instructions

  1. Season chicken thighs with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes per side. Remove chicken from skillet and set aside.
  3. Add garlic to the skillet and cook for 1 minute until fragrant.
  4. Add orzo pasta and chicken broth to the skillet. Bring to a boil, then reduce heat and simmer for 10-12 minutes, or until orzo is cooked and liquid is absorbed.
  5. Stir in heavy cream, Parmesan cheese, and lemon juice. Season with salt and pepper to taste.
  6. Return chicken to the skillet and heat through.
  7. Garnish with fresh parsley and serve.

  • For extra flavor, marinate the chicken thighs for at least 30 minutes before cooking.
  • You can substitute chicken breasts for chicken thighs, but adjust cooking time accordingly.
