Easy and flavorful chicken tacos made in your slow cooker.

- 2 pounds boneless, skinless chicken breasts
- 1 packet taco seasoning
- 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
- 1/2 cup chicken broth
- 1/4 cup chopped onion
- 1/4 cup chopped bell pepper
- 8–10 taco shells
- Optional toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa
Instructions
- Place chicken breasts in the slow cooker.
- In a bowl, combine taco seasoning, Rotel, chicken broth, onion, and bell pepper. Pour over chicken.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and tender.
- Remove chicken from slow cooker and shred with two forks.
- Return shredded chicken to the slow cooker and stir to combine with the sauce.
- Warm taco shells according to package directions.
- Fill taco shells with shredded chicken mixture.
- Add your favorite toppings.
Notes
- You can substitute chicken thighs for chicken breasts.
- Adjust seasoning to your preference.
- For a spicier taco, add a pinch of cayenne pepper.
