Description

Easy and flavorful chicken tacos made in your slow cooker.


Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts
  • 1 packet taco seasoning
  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
  • 1/2 cup chicken broth
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 810 taco shells
  • Optional toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, salsa

Instructions

  1. Place chicken breasts in the slow cooker.
  2. In a bowl, combine taco seasoning, Rotel, chicken broth, onion, and bell pepper. Pour over chicken.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and tender.
  4. Remove chicken from slow cooker and shred with two forks.
  5. Return shredded chicken to the slow cooker and stir to combine with the sauce.
  6. Warm taco shells according to package directions.
  7. Fill taco shells with shredded chicken mixture.
  8. Add your favorite toppings.

Notes

  • You can substitute chicken thighs for chicken breasts.
  • Adjust seasoning to your preference.
  • For a spicier taco, add a pinch of cayenne pepper.
