Description
This is a low-carb chicken dish with spinach and mushrooms, baked in the oven.
Ingredients

- 4 chicken breasts
- 10 oz spinach, fresh
- 8 oz mushrooms, sliced
- 1/2 cup heavy cream
- 1/4 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add garlic and cook until fragrant.
- Add mushrooms and cook until softened.
- Add spinach and cook until wilted.
- Season with salt and pepper.
- Place chicken breasts in a baking dish.
- Pour spinach and mushroom mixture over chicken.
- Pour heavy cream over the mixture and sprinkle with Parmesan cheese.
- Bake for 25-30 minutes, or until chicken is cooked through.
Notes
- You can add other vegetables, such as onions or bell peppers.
- For a richer flavor, use Gruyere or mozzarella cheese.
