Description

This is a low-carb chicken dish with spinach and mushrooms, baked in the oven.


Ingredients

Scale
  • 4 chicken breasts
  • 10 oz spinach, fresh
  • 8 oz mushrooms, sliced
  • 1/2 cup heavy cream
  • 1/4 cup Parmesan cheese, grated
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Add garlic and cook until fragrant.
  3. Add mushrooms and cook until softened.
  4. Add spinach and cook until wilted.
  5. Season with salt and pepper.
  6. Place chicken breasts in a baking dish.
  7. Pour spinach and mushroom mixture over chicken.
  8. Pour heavy cream over the mixture and sprinkle with Parmesan cheese.
  9. Bake for 25-30 minutes, or until chicken is cooked through.

Notes

  • You can add other vegetables, such as onions or bell peppers.
  • For a richer flavor, use Gruyere or mozzarella cheese.
