Description

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1 cup cooked rice
  • 1 cup pineapple chunks
  • 1/2 cup red bell pepper, diced
  • 1/4 cup green onions, chopped
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp ginger, grated
  • 1/2 tsp garlic, minced

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned and cooked through.
  3. In a small bowl, whisk together soy sauce, honey, ginger, and garlic.
  4. Pour sauce over chicken and cook for 1-2 minutes, until sauce has thickened slightly.
  5. Divide rice among bowls.
  6. Top with chicken, pineapple, and red bell pepper.
  7. Garnish with green onions.
  8. Serve immediately.

Notes

  • For extra flavor, marinate chicken in the sauce for 30 minutes before cooking.
  • Add a pinch of red pepper flakes for a little heat.
