Ingredients

- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 1 cup cooked rice
- 1 cup pineapple chunks
- 1/2 cup red bell pepper, diced
- 1/4 cup green onions, chopped
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tsp ginger, grated
- 1/2 tsp garlic, minced
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned and cooked through.
- In a small bowl, whisk together soy sauce, honey, ginger, and garlic.
- Pour sauce over chicken and cook for 1-2 minutes, until sauce has thickened slightly.
- Divide rice among bowls.
- Top with chicken, pineapple, and red bell pepper.
- Garnish with green onions.
- Serve immediately.
Notes
- For extra flavor, marinate chicken in the sauce for 30 minutes before cooking.
- Add a pinch of red pepper flakes for a little heat.
- Serve with a side of steamed broccoli or edamame.
