Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 8 cups chicken broth
  • 1 cup carrots, sliced
  • 1 cup celery, sliced
  • 1 cup onion, diced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces egg noodles
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Place chicken breasts in a large pot and cover with chicken broth.
  2. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until chicken is cooked through.
  3. Remove chicken from the pot and shred with two forks.
  4. Add carrots, celery, onion, thyme, salt, and pepper to the pot.
  5. Bring to a boil, then reduce heat and simmer for 10 minutes, or until vegetables are tender.
  6. Add egg noodles and shredded chicken to the pot.
  7. Cook for 8-10 minutes, or until noodles are tender.
  8. Stir in fresh parsley before serving.

Notes

  • For a richer flavor, use homemade chicken broth.
  • You can add other vegetables, such as peas or corn.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
