- 1 pound boneless, skinless chicken breasts
- 8 cups chicken broth
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 1 cup onion, diced
- 1 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 8 ounces egg noodles
- 2 tablespoons fresh parsley, chopped
Instructions
- Place chicken breasts in a large pot and cover with chicken broth.
- Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until chicken is cooked through.
- Remove chicken from the pot and shred with two forks.
- Add carrots, celery, onion, thyme, salt, and pepper to the pot.
- Bring to a boil, then reduce heat and simmer for 10 minutes, or until vegetables are tender.
- Add egg noodles and shredded chicken to the pot.
- Cook for 8-10 minutes, or until noodles are tender.
- Stir in fresh parsley before serving.
Notes
- For a richer flavor, use homemade chicken broth.
- You can add other vegetables, such as peas or corn.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
