Description

Chicken fried rice served in a pineapple bowl.


Ingredients

Scale
  • 1 pineapple, halved lengthwise
  • 2 cups cooked rice
  • 1 cup cooked chicken, diced
  • 1/2 cup mixed vegetables
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 egg, scrambled
  • Salt and pepper to taste

Instructions

  1. Cut the pineapple in half and scoop out the flesh, leaving a 1/2 inch thick shell. Reserve the pineapple flesh.
  2. Dice the reserved pineapple flesh.
  3. In a large pan or wok, heat sesame oil over medium heat.
  4. Add mixed vegetables and cook until tender.
  5. Add diced chicken and pineapple, cook for 2 minutes.
  6. Add cooked rice and soy sauce, stir well to combine.
  7. Push the rice mixture to one side and pour in the scrambled egg, cook until set.
  8. Mix the egg with the rice mixture.
  9. Season with salt and pepper to taste.
  10. Spoon the chicken fried rice into the pineapple bowls.
  11. Serve immediately.

Notes

  • You can add other ingredients such as shrimp, pork, or tofu.
  • Adjust the amount of soy sauce to your preference.
