Description
Chicken fried rice served in a pineapple bowl.
Ingredients

- 1 pineapple, halved lengthwise
- 2 cups cooked rice
- 1 cup cooked chicken, diced
- 1/2 cup mixed vegetables
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 egg, scrambled
- Salt and pepper to taste
Instructions
- Cut the pineapple in half and scoop out the flesh, leaving a 1/2 inch thick shell. Reserve the pineapple flesh.
- Dice the reserved pineapple flesh.
- In a large pan or wok, heat sesame oil over medium heat.
- Add mixed vegetables and cook until tender.
- Add diced chicken and pineapple, cook for 2 minutes.
- Add cooked rice and soy sauce, stir well to combine.
- Push the rice mixture to one side and pour in the scrambled egg, cook until set.
- Mix the egg with the rice mixture.
- Season with salt and pepper to taste.
- Spoon the chicken fried rice into the pineapple bowls.
- Serve immediately.
Notes
- You can add other ingredients such as shrimp, pork, or tofu.
- Adjust the amount of soy sauce to your preference.
