Chicken Enchiladas

Description

Classic chicken enchiladas recipe.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pound cooked chicken, shredded
  • 1 can (10 ounces) enchilada sauce
  • 1 cup shredded cheese
  • 12 corn tortillas

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Heat olive oil in a skillet over medium heat. Add onion and garlic and cook until softened.
  3. Stir in shredded chicken and 1/2 cup enchilada sauce.
  4. Warm tortillas. Fill each tortilla with chicken mixture and roll up.
  5. Place enchiladas in a baking dish and top with remaining enchilada sauce and cheese.
  6. Bake for 20 minutes, or until cheese is melted and bubbly.
